Nico has worked in the service, bar and management areas of the restaurant business for 20 years. Prior to opening the 21st Amendment, Nico was the manager and maitre'd at Delfina, one of the most highly acclaimed new restaurants in San Francisco. Prior to Delfina, Nico worked as a maitre'd and waiter at Chez Michel, one of San Francisco's few four star restaurants. He was a bartender and waiter at San Francisco's Zuni Café and was the General Manager of Timo's Norte, located in San Francisco's Ghirardelli Square. He opened the 200 seat restaurant, overseeing and actively participating in every aspect of start-up operations. In Los Angeles, Nico managed the opening of a 100 seat restaurant, Maria's Cucina, in 1994, handling all aspects of start-up and daily operations. Prior to that, he managed the popular Trattoria Angeli restaurant in West Los Angeles. In addition, Nico has worked in restaurants of all types and styles from Dominos pizza to the Cheesecake Factory.

Nico began his restaurant career as a waiter in Chicago endeavoring to put himself through college at Northwestern University. His choice of study, acting, helped to ensure a long career in the restaurant business. Nico worked in all areas of the industry from waiter to bartender, catering to host to captain and maitre'd. Along the way, he rummaged for materials to make the perfect martini with legendary Hollywood director Billy Wilder, served caviar to Sean Connery, delivered pizza to Chevy Chase, Martin Short and George Carlin and worked and learned every area of the restaurant business.

In the early 1990s, while visiting relatives in Seattle and San Francisco, Nico became mesmerized by the unique beers being made in these cities on the cutting edge of the brewpub revolution. He eagerly read and learned everything he could about the craft of brewing, moved to San Francisco to be closer to the good beer movement and immediately got a job working at a small downtown San Francisco brewery. Shortly thereafter, Nico became the regional beat writer for the Celebrator Beer News, the west coast's largest beer publication, visiting and writing about virtually every brewery in the Bay area and beyond. In addition to his role as a writer for the Celebrator Beer News, Nico was also a regular contributor to Brew Your Own and Brewpub magazines, and has written for the California Small Brewer's Association magazine. Nico also traveled to Japan as a consultant to open Japan's largest micro-brewery in 1997.

Nico received his Bachelor of Science degree from Northwestern University's School of Speech in 1986.
